The Monuments Men
The running gag with Matt Damon's character's atrocious French. It's so bad, everytime he speaks French, the person he's talking to asks him to speak English, instead.
These scenes are done with subtitles so you can see just how bad it is.
Stahl, the Nazi in charge of looting the Louvre, asks Cate Blanchett's character (Claire) to get a champagne glass for him. She goes and gets it--and spits in it. A colleague sees her do it. Claire tells the girl the glass is for Stahl--and the colleague spits in it, too.
The men befriend a soldier, Epstein, whose family left Germany when the Nazis came to power. When a group of German soldiers are caught trying to flee with stolen art, Epstein loiters near them, listens to them talking about where they were going and why, and tells the others. He then thanks the German captain for his help and walks off, leaving the pow sitting there with a "What the hell just happened?" expression.

Another good scene was the Frenchman's reaction when Damon told him he learned French in Canada.
One more good one--at the very end of the movie, seeing Clooney's character as an old man. Not only that, but he's played by Nick Clooney, who's either George's father or his uncle.

I Love You To Death
The wannabe hitmen are going to shoot Kevin Kline in the heart...but they can't remember where exactly in the chest it is. Then they remember that in school, they put their hand over their heart to recite the pledge. So, while holding their hand over their heart, they try to recite the pledge...and fail hilariously.
They bring a baseball bat for backup...and notice that it's a Reggie Jackson model. Cue them chanting "Reggie! Reggie! Reggie!"
William Hurt and Keanu Reeves are hilarious as the 'hitmen'.
River Phoenix's 'disguise'--a Fu Manchu moustache.
Kevin Kline's mother visits him in the hospital and proceeds to bawl him out over his cheating on Ullmann, and smacks his head (you know, where he got shot).

Coal Miner's Daughter--
A classic case of what TV Tropes calls 'mood whiplash': Patsy Cline happily planning to throw a baby shower for Loretta Lynn after Patsy gets back from her next concert--"I want you to make a list, and we'll go shopping. Whatever we can't buy, we'll make. And whatever we can't make--we'll steal!" ...And then Loretta literally wakes up to the news that Patsy died in a plane crash on her way home from said concert.
The final scene is a tearjerker--Patsy's husband, Charlie, after her funeral, slow dancing in their living room to her music.

Return Of The Jedi
A sad one--two Ewok fighters get knocked down by an explosion. A few moments later, one gets up and tries to rouse his friend...only to realize he's dead.
A funny one--Lando's reaction when the Sarlaac grabs him. That cry/shout he does just sounds so funny.
